              Brewed @ 21C for 7 days

              Then leave in fermenter for another 5 days before bottling.

              1 month for carbonation and maturing.

             Southern Settler : Makes 45 Litres

             2 cans Coopers Australian Pale Ale

             1.5kg  Morgans Extra Pale Malt Extract

             1kg Brewcraft German Lager Enhancer

             500g Dry Light Malt Extract

             250g Dry Corn Syrup

             1 x Morgans Pride of Ringwood hops infusion bag

             2 Pkts Coopers Dry Yeast (From the Kits)

             NOTES: Boil 3L of hot water and add 2 cans Coopers Pale Ale,1.5Kg Morgans Extra Pale Malt Extract,

                                1Kg Brewcraft German Lager Enhancer,500g Dry Light Malt Extract, 250g Dry Corn Syrup.

                                Top water up to around 10L and boil infusion hop bag for 15 min stirring till all is mixed.

                                12L of heated ingredients maximum unless you intend to cool.

                                Pour into the fermenter and top up to 46L using cold water, add yeast when temp is between 19C & 23C.

1 can Coopers Australian Pale Ale

250g Dry Corn Syrup

4g Saaz Hop Pellets (Boiling)

8g Saaz Hop Pellets (Wet Hopping)

1 Pkt Coopers Yeast (from the kit)

Wet Hopping: Add the 8g of Saaz hops to a cup of boiling water and

let steep for 5 minites.

Once you have racked your brew to your second

fermenter, add the hops before sealing the fermenter.

Coopers Extra Strong Vintage Ale

1 can Coopers Australian Pale Ale

1 can Coopers Real Ale

Filled to 20L and then top up to 23L with hot/cold water to achieve target temperature of 18 deg then pitch both kit yeasts and leave for 2 weeks to ferment (try to maintain below 20 deg).
Warning: this brew may have an energetic krausen so be careful and keep an eye on your lid and airlock!
Tip: wrap a clean tea towel around your lid or place the fermenter inside a large container incase you have a krausen spill, it's messy to clean! Mature in bottle for 8-12 weeks minimum as this is quite bitter and needs time for the flavours to blend nicely. Very easy and full bodied beer.
For a variation on this you may like to sub the Coopers Real Ale for the Coopers English Bitter, both are great.

Dark Ale-2

             1 can Coopers Original Series Dark Ale

             1.5kg Coopers Amber Liquid Malt (or 1kg Light dry malt + 500g wheat dry malt if not using grains)

             250g Medium Crystal cold steeped overnight

             125g Crystal Wheat

             Boiled Sweet wort from cold steep

             25g Citra hops boiled for 20 mins

             25g Citra hops boiled for last 8 mins

             15g Amarillo hops at flameout

             Filled to 21L and used Coopers Kit yeast

             Dry Hopped with 25g Citra and 25g Amarillo hops for 4 days prior to bottling.

             Bottle conditioning 4 weeks, drink early to take advantage of the hop flavour and aroma.

Jock McAle (Named after Collingwood's legendary coach, my AFL team)
I wanted to make a Scottish Ale, so I found this one from Coopers' website and adapted it.
Thomas Cooper Sparkling Ale 1.7kg
Amber Malt extract 1.5kg
Brown sugar 500g
Safale US-05 yeast (my homebrew shop said it was close to the required Nottingham)

1.058 highest on record! FG 1.016, resulting in a knock your socks off 6.00%

Fermented as above, but with 230g dextrose in the bottle carbonation.
Made that in April and enjoyed a bottle of it tonight.
I love the maltiness and I can definitely taste the sugar content. 
It has a deep amber colour, not quite ruby.

Dry Enzyme

Used to ferment more of the malt sugars to make a drier/diet beer

To be used with the yeast, not to replace the yeast.

 

 

             Note: CSR brewing sugar consists of Sucrose and Maltodextrin.

 

METHOD:

In a large pot add 4litres hot water, bring to the boil and add the boiling hops. Boil for 10 mins, and then add the finishing hops. Turn off the heat and add all the other ingredients stirring until totally dissolved. Pour this into your fermenter and top up with cold water to the 23 litre mark.   Add the yeast when the wort has cooled.
